An exotic twist to a classic cocktail: our Kumquat Mojito features a perfect blend of tangy kumquats, zesty lime, and refreshing mint to tickle your taste buds. It’s the ultimate thirst-quencher for a sunny day or a cheeky night in.

What you need

Cocktail shaker

Muddler

Jigger

Ingredients

SERVES ONE

  • 4 kumquats, halved
  • Small handful fresh mint leaves
  • ½ lime, cut into wedges
  • 2 tsp. sugar
  • 60ml white rum (we use Bacardi)
  • Crushed ice
  • 120ml soda water
  • Optional garnish: sliced kumquats, mint sprig

Preparation

Step 1

In a cocktail shaker, combine the halved kumquats, mint leaves, lime wedges, and sugar.

Step 2

Muddle the ingredients together, gently crushing the kumquats and mint leaves to release their juices and flavours.

Step 3

Pour the muddled kumquats, mint and lime into the cocktail glass and top with crushed ice, leaving some space at the top for the club soda.

Step 4

Pour the white rum over the crushed ice.

Step 5

Top up the glass with club soda, and give the mojito a quick stir to combine the ingredients.

Step 6

Garnish with kumquat slices and a mint sprig if desired. Cheers!

✨ RECIPE NOTES ✨

  • Sweetness: Adjust the sugar to taste, depending on the tartness of the kumquats and your personal preference.
  • Mocktail: For a non-alcoholic mocktail version, simply omit the white rum and add extra club soda.
  • Supersize it: To make a pitcher, multiply the recipe by the number of servings you want, and combine the ingredients in a large jug or pitcher. These go great with outdoor summer BBQs!
